Marinara Pizza

Would you believe me if I said I really disliked pizza for the bulk of my youth?  I think in high school I went about two years without eating pizza.  I just didn’t see the point.  I blame this on the misfortune that is Pizza Hut/Domino’s/Papa John’s. But I’m all grown up now! Good pizza exists. In fact, it seems like there’s been a whole bunch of excellent pizza in my life lately.  Pizzeria Mozza. Village Pizzeria. Il Capriccio Pizza. And now Pizzeria Bruno.

I went down to San Diego today to give myself a little working space to re-structure my thesis.  I felt I needed distance from Los Angeles.  I rewarded my hard work with dinner with Felipe & Christina.  Really, getting work done in San Diego was just an excuse to see them

Morning comforts.

This is a James Beard On Bread Recipe.  That James…he sure is good.

2 cups flour

2 tablespoons of butter

1 1/4 cup heavy cream

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon of salt

* I halved the recipe to make 7 biscuits

1. preheat oven to 450

2. sift together flour, baking powder, sugar and salt

3. melt butter and set aside

4. add about 1 1/4 cup of heavy cream to the flour until the dough holds together but isn’t too sticky.  Use the reserved 1/4 cup heavy cream if necessary

5. on a lightly floured surface form the dough into a disc about 3/4 inch thick

6. use a 2 1/2 inch biscuit cutter to cut out biscuits.  you will have to re-form the dough a few times after cutting out a few rounds to maximize the dough

7. brush the tops with the melted butter

8. bake for 10-15 minutes

Marcus performed his new piece, Crank, at Francois Ghebaly Gallery last night in Chinatown.  It’s incredible to witness a performance maturate from concept to actual physical movements.  I think I know what something might look like and find that the end result is vaguely knowable but also completely unexpected and exciting.  Marcus envisioned Crank as a manually looped set of actions that can be viewed for small increments of time–the audience can peek in and then wander and then come back.  Unexpectedly, I think for both him and me, I found the repetitive motion hypnotizing in a way and it felt important to absorb the drone of predictable movement.  The piece is about airport security, among many other things, and the numbness of repetition came through as a product of constant surveillance.  The effect was perfectly chilling. Oh, what my faithful former postmodernism students would say about that one…

Also after watching the same set of movements for an hour, I started to notice all the little nuances between each looped round–the frequency of the large frame hitting the walls, the shedding wax on the suitcase.  Jon Wagner once used the term “the radiance of ordinary things” which has stuck with me ever since and again the phrase comes to mind when I think about how repetition also gives way to a certain kind of radiance.

Then on a basic level, I’m astounded at the way Marcus pushes his body.  Watching him rotate a wooden frame for that long period of time punctuated only by small breaks to lift a pail of orgone matter high into the air was hard in a way because i could see the fatigue in his face and indeed he was near passing out when his hour was up.  And I don’t think I was the only person who felt concerned for his fatigue.  There was a collective anxiety among the viewers about the whole thing, which again, was appropriate for the subject matter.  I love that Marcus’ performances do this, that they induce a non-verbal communication between the audience and the performer, that he isn’t telling you to feel a certain thing but rather cultivates a sort of tension through cumulative action.

…oh and I made red velvet sandwich cookies as a good luck present! I adapted a recipe for red velvet black & white cookies from Joy The Baker who I think adapted the recipe from a Rachael Ray recipe (eww).  I find black and white cookies to be quite sloppy looking but I liked the idea of a red velvet cookie and because it makes sense and because Marcus’ favorite thing ever is cream cheese, a cream cheese filling felt appropriate.

Ingredients:

for cookies:

1 1/4 cup all purpose flour

1 tablespoon cocoa powder

1/2 teaspoon of salt

1/2 teaspoon baking soda

5 tablespoons of unsalted butter

3/4 cup sugar

1 egg, room temp

1 tablespoon red food coloring

1 teaspoon vanilla

filling:

6 oz cream cheese

6 tablespoons of butter

2 cups confectioners sugar

2 teaspoons vanilla extract

1/2 cup buttermilk

* i doubled the recipe to make about 30 sandwich cookie (60 individual sides)

1. preheat oven to 350

2. sift together flour, cocoa, salt, and baking soda

3. in a separate bowl beat together sugar and butter until fluffy

4. add egg and beat until well combined

5. add vanilla extract and food coloring

6. add the flour and buttermilk in 3 separate alternating additions

7. on a parchment lined cookie sheet drop 1 tablespoon sized balls of dough about 2 inches apart

8. with a knife or spatula slightly flatten the dough until they are disc shaped

9. bake for 10-12 minutes

10. in the meantime make the filling by combining the room temperature cream cheese and roomtemperature butter and then the vanilla and then the sugar last

11. wait for the cookies to cool before fillin

Lately Nancy and I have been talking about this mysterious positive energy that seems to be floating near us.  It feels fragile and precious and somewhat difficult to describe, except that tonight sort of summed it up for me.  Last minute and kind of out of nowhere I had an itch to cook dinner for my friends–something warm and cozy and carby.  Lan, Nancy, and Sam were kind enough to scratch this itch and we all ate udon, broccoli and vegan meatball, and yuzu salad together, crammed into my tiny kitchen with soup bowls in our laps.  It felt impromptu and unusually easy.  While we were eating I marveled at how amazing it was that I met Nancy during a certain part of my life, Lan in another, and Sam in another and we were all sitting together, eating, talking.  It’s strange and wonderful that we’ve converged in this way.  I feel grateful for this.

Afterwards we went to Scoops and Nancy bought me ice cream. Also grateful for this.

Because a tub growing among trees and alfredo flavored gelato is not amazing enough, Marcus took me to an adorable Italian deli.  With the sort of bravado that I can’t even begin to approach, Marcus requested two sandwiches, the filling choices deferred to the expert discretion and taste of the man pictured above.  This man knew his Italian meats.  I wouldn’t have been surprised if someone told me that he never leaves his deli counter, that he sleeps there and when they turn the lights off in the store he leans his head against the glass case and uses a log a salami as a pillow.  When I asked to take his picture he responded, “Yes, people take my picture all the time” in an almost tired tone, as if he finds his meat celebrity boring at this point.

What was confidently handed off to us were two sandwiches absolutely dripping with spicy meats, olive oil, and provolone cheese.  These we consumed happily with soup and a bitter Italian soda.

Today I helped Marcus and his friend Christine take photographs of a tub prop that Marcus will be using in the next two performances.  It was kind of amazing to see a tub choreographed in a designated space.  It looked so other worldly and it occurred to me that the tub looked like a portal somehow when set up in that way.  Christine envisioned the whole thing beautifully–a rusted tub set against lush green and brittle twigs.  Without seeing the prints I already know they are gorgeous.

I’ve used this word entirely too much today but the process felt vaguely magical and when things are magical one should partake in the eating of something indulgent, something like gelato.  Marcus took me to Bulgarini where we proceeded to systematically sample all the flavors, our fists full of tasting spoons.  Like my other ice cream favorite Scoops, Bulgarini has exciting flavors.  The most exciting was a ricotta and parsley flavored savory gelato which Marcus likened to alfredo sauce.  In the end we settled on more conventional but nevertheless exciting flavors of blood orange, pomegranate, lemon crema, mango, and cantaloupe. Later in the evening Candice mentioned that they also make a red pepper strawberry which sounds equally enticing.

Marcus has been working feverishly lately: 2 upcoming performances, articles, gallery work, the small tediums of being a person in the world.  The other night he holed himself up at UCI for a near 24 hours making beautiful text photographs, meticulously editing, forming, re-forming.  Unsurprisingly he’s been a little frayed as of late.  I know this feeling.  It’s the no sleep, powered by little more than your own enthusiasm, will undoubtedly crash, near depletion feeling.

This feeling should be recognized, rewarded.  Specifically this feeling should be rewarded by food, preferably prepared lovingly by a person who feels invested in acknowledging this very rare feeling of extreme exhaustion.

Slow cooking methods seem romantic to me.  Why? I don’t know.  It just seems like something true.  I made coq au vin, supplemented by appetizers of olives, crusty bread, and prosciutto wrapped melon.

We ate on the floor.

It was nice.
